Maple-Glazed Ham

It’s spring, the snow is melting and Easter is just around the corner.
All indicators are there in the universe: it’s the perfect time to revisit the famous Quebec maple ham. At La Pimenterie, we think this classic deserves a little spice!
INGREDIENTS
- 1 picnic smoked pork shoulder with bone, 3.5 kg (about 7 3/4 lb)
- 5 cloves
- 1 onion, chopped
- 250 mL (1 cup) maple syrup
- 30 mL (2 tbsp.) mustard powder
- Salt and pepper to taste
PREPARATION
- Preheat the oven to 180°C (350°F).
- Remove excess fat from pork shoulder. Insert cloves into pork shoulder.
- Place pork shoulder in a large cast iron casserole dish. Spread the onion around the shoulder.
- In a bowl, mix regular maple syrup with mustard powder and 250 mL (1 cup) water. Season with salt and pepper.
- Pour the maple mixture over the shoulder.
- Cover and bake for 2 to 2 1/2 hours, basting ham with pan juices every 30 minutes.
- Top ham with Chipotle Maple Syrup before serving! If you really want more kick, try the Bhut Jolokia.You can also add a little Colonel’s Hot Sauce, because we all know that ham and mustard is a great love story that just won’t die.
