Crispy Fish Tacos – Calypso and Mango Salsa

Portions :8 to 10 small tacos

Ingredients : 

For the fish : 
   ❧ 1 lbs. (450g) of white fish, cut in small dices
   ❧ 2 tbsp. (30ml) corn starch
   ❧ 2 tbsp. (30ml) flour
   ❧ 1⁄3 cup (80 ml) canola oil
   ❧ 2 tbsp. (30 ml) Calypso hot sauce
   ❧ 1⁄4 tsp. (1.5 ml) salt

For the salsa : 
   ❧ 3 mangos, cut in dices
   ❧ 1⁄4 cup (60 ml) fresh coriander 
   ❧ 2 diced green onions
   ❧ 1 tsp. (5 ml) salt flower
   ❧ 3 tbsp. (45 ml) olive oil

For the guacamole : 
   ❧ 3 avocados
   ❧ 3 tbsp. (45 ml) lime juice
   ❧ 1 tbsp. (15 ml) olive oil
   ❧ 2 tbsp. (30 ml) diced red onion
   ❧ 1⁄2 tsp. (2.5 ml) salt

Fort the tacos : 
   ❧ 8 to 10 grilled corn tortillas 
   ❧ Feta  
   ❧ Cherry tomatoes

For the fish :
Dry a bit your fish et put the pieces in a big bowl. Add the corn starch and the flour and make sure every piece is covered.
Heat up the oil in a pan and add the fish. Let them cook until golden. You can  drain them from time to time during cooking but make sure it has a perfect tan !
Put it back in a clean bowl and add the amazing Calypso and some salt. Mix soflty et let it rest…

For the salsa : 
In a bowl, mix the mango, the coriander, the green onions, salt and oil. You can taste to make sure it’s really super duper yummy but leave some for the tacos !
(Psssst, as for my salsa, I added some Calypso in here too because why not some more spicylicious !!!)

For the guacamole :
Crush the avocados in a big bowl and add the lime, the olive oil, the onion and the salt. After mixing everything, you can taste this one too.
(Pssst again, here I added some Vertigo because it gives any guacamole a perfect extra kick !!!)

For the assembly :
You can toast a bit your tortillas to your liking before assembling the tacos in your plate. Spread some guacamole, put the spicy fish, the salsa, the feta and the tomatoes. Fold in two and dig in !
