Fumisterie-Style Black Beer Ribs and Creamy Coleslaw

For the ribs preparation :
   ❧ 2 tsp brown sugar
   ❧ 1 tsp cocoa
   ❧ 2 tsp paprika
   ❧ 1 tsp chili powder
   ❧ 1 tsp garlic powder
   ❧ 1 tsp onion powder
   ❧ 1 tsp kosher salt
   ❧ 4 back ribs (3 to 4 kg).

For the sauce :
   ❧ 2 tsp (30 ml) olive oil
   ❧ 1 onion (finely chopped)
   ❧ 1⁄4 cup (60 ml) ketchup
   ❧ 2 tsp (30 ml) brown sugar
   ❧ 1 black beer
   ❧ 3 tsp (45 ml) smoke sauce
   ❧ 2 tsp (30 ml) cornstarch 

Coleslaw ingredients :
   ❧ 1 cabbage (chopped)
   ❧ 2 carrots (grated)
   ❧ 2 green shallots (finely chopped)
   ❧ 1⁄2 cup (125 ml) mayonnaise
   ❧ 1 tsp (15 ml) sugar
   ❧ 2 tsp (30 ml) apple cider vinegar
   ❧ 2 tsp (15 ml) mustard
   ❧ Fresh pepper

Méthode

Method

For the ribs:
Preheat the oven to 225°F with the rack in the center. Mix the brown sugar, the cocoa, the paprika, chili, garlic and onion powders and the kosher salt together. Set aside.
Using a paper towel, remove the back membrane from ribs. Sprinkle and rub spice mixture on all sides of the ribs and wrap individually in 4 lined aluminum foils. Transfer to a baking sheet and bake for 3 to 4 hours. Once the ribs are tender, remove them from the foil and brown them on the BBQ by brushing with BBQ sauce on both sides. You may wish to complete this step on a BBQ-safe baking sheet to prevent the ribs from sticking to the grates.
For the sauce:
Heat the oil in a small saucepan over a medium heat and soften the onion for 2 to 3 minutes. Add the ketchup, the brown sugar, the black beer and the amazing hot sauce Fumisterie. Mix and bring to a boil. Remove from heat, and using a hand blender, grind the sauce into a smooth mixture. Return to the heat and simmer. Dissolve cornstarch in 1 tablespoon of water and whisk it into the sauce. Once the sauce has thickened, remove it from the heat. Keep warm.
For the coleslaw:
In a large bowl, whisk together the mayonnaise, the sugar, the apple cider vinegar, the mustard and some fresh pepper. Add cabbage, carrots, and green onions. Mix well and set aside.
Bring everything together in a nice plate and ENJOY !
