For the marinade :
❧ 2 tbsp (30 mL) Royal Bourbon
❧ 1 tbsp (15 mL) brown sugar
❧ 1 tbsp (15 mL) soy sauce
❧ 2 tbsp (30 mL) bourbon
❧ 1 tbsp (15 mL) hot mustard
❧ 1 tbsp (15 mL) olive oil
❧ 2 flank steaks of approximately 400 grams each
For the mayonnaise mix:
❧ ½ tasse (125 mL) de mayonnaise
❧ Zest of one lemon
❧ 2 tbsp (30 mL) chopped fresh basil
❧ 2 tbsp (30 mL) chopped fresh parsley
❧ 2 tbsp (30 mL) chopped fresh thyme
❧ Fresh pepper
❧ Flower of salt
Marinade preparation :
Mix all marinade ingredients together in a bowl. Add the flank steak and cover. Leave the dish to marinate for 20 to 30 minutes.
Preheat your BBQ to high.
For the mayonnaise and flank steak :
Mix all the mayonnaise ingredients together and set to one side. Cook the flank steak on the BBQ, basting both sides throughout until prepared to your taste. We recommend removing the flank steak from the BBQ once it has reached an internal cooking temperature of 140F°. Once removed, leave it to rest for 10 minutes wrapped in aluminum foil. Slice the flank steak into strips (against the grain) and serve with mayonnaise and french fries.
