For the tartare:
❧ 300g fresh salmon, skinless, sushi quality
❧ 1 green apple, diced
❧ ¼ cup (60 mL) fresh cilantro, chopped
❧ 1 tbsp (15 mL) diced red onion
❧ 1 tbsp (15 mL) fresh ginger grated
❧ 2 lebanese cucumbers, diced
For the sauce:
❧ ¼ cup (60 mL) mayonnaise
❧ 3 tbsp (45 mL) Vertigo sauce
❧ Juice of one lime
Cut the salmon into brunoise and set aside to cool in the refrigerator.
In a bowl, mix the mayonnaise, the Vertigo sauce and the lemon juice. Add the diced green apple, the chopped fresh cilantro, the ginger, the red onion and the cucumber. Add the salmon and it is ready!
For a fun and fancy serving suggestion, place the salmon in a circle, delicately sprinkle the tartare mix on top of it, and decorate with cilantro leaves.
