Quick brioche rolls with scrambled tofu and Loounie's magic sauce

Brioches express au tofu brouillé à la Sauce magique Loounie

Cook time: 10 minutes (Air Fryer) or 25 minutes (Oven)

Yields: 2 buns

Ingredients

For the Tofu Scramble

  • 60 ml (¼ cup) unsweetened plain soy beverage

  • 15 ml (1 tbsp) tahini

  • 1 ml (¼ tsp) Kala Namak salt (or table salt)

  • 0.5 ml (⅛ tsp) turmeric powder

  • 225 g (½ block) firm or extra-firm tofu, crumbled

  • 30 ml (2 tbsp) non-dairy cheese shreds (optional)

  • 15 ml (1 tbsp) chopped chives (optional)

For Assembly

  • 60 ml (¼ cup) unsweetened plain soy beverage

  • 15 ml (1 tbsp) nutritional yeast flakes

  • 6 round rice paper sheets

  • Sauce Magique, to taste

  • Vegetable oil, to taste

  • Everything Bagel seasoning (optional)

Preparation

The Tofu Scramble

  1. In a skillet over medium heat, combine the soy beverage, tahini, salt, and turmeric. Mix well.

  2. Incorporate the crumbled tofu, non-dairy cheese, and chopped chives. Stir to coat evenly.

  3. Heat for 2–3 minutes, stirring occasionally, until the tofu is hot and creamy. Set aside. (Pro tip: Can be made ahead and stored in an airtight container in the fridge).

Assembling the Buns

  1. In a shallow dish, combine the soy beverage and nutritional yeast.

  2. Dip a first rice paper sheet into the mixture, ensuring it is fully submerged. Place it on your work surface.

  3. Repeat with a second and third sheet, overlapping them slightly to form a row (similar to the Olympic rings layout).

  4. Spread half of the tofu scramble across the length of the rice paper row. Drizzle with Sauce Magique to your liking.

  5. Fold the bottom of the sheets over the tofu, tuck in the ends to seal, and fold the top down to create a cylinder. Roll the cylinder onto itself like a snail shell and seal tightly.

  6. Repeat the process with the remaining three sheets and tofu for the second bun.

Cooking Instructions

Air Fryer Method

  • Line the air fryer basket with parchment paper. Place the buns inside and lightly brush or spray with oil. Sprinkle with bagel seasoning.

  • Cook at 400°F for 8 to 10 minutes, or until golden brown and crispy. Serve immediately.

Oven Method

  • Preheat oven to 400°F and line a baking sheet with parchment paper.

  • Place the buns on the sheet, brush or spray with oil, and add bagel seasoning.

  • Bake for 25 to 30 minutes until golden. Serve immediately.

Pro Tips & Notes

The buns are at their peak crispiness right out of the heat. They will soften as they cool, so we recommend eating them immediately. If you're prepping in advance, a quick reheat in the air fryer or oven will bring back that signature crunch!
