A homemade mayonnaise twisted with La Pimenterie’s Bollywood sauce. Creamy, fragrant, and delicately spicy, this Bolly-Mayo is inspired by Indian flavors: perfect for drizzling over fries, topping veggie burgers, or enhancing colorful bowls. A homemade condiment that changes everything.

Ingredients (for about 1 cup):

  • 1 egg yolk (room temperature)

  • 1 tbsp Dijon mustard

  • 1 tbsp apple cider vinegar or lemon juice

  • 250 ml (1 cup) neutral oil (canola, grape seed, etc.)

  • 1 to 2 tbsp La Pimenterie’s Bollywood sauce

  • Salt to taste

Preparation steps:

  1. In a bowl, whisk together the egg yolk, mustard, and vinegar until smooth.

  2. Slowly drizzle in the oil in a thin stream while whisking constantly to emulsify the mayonnaise.

  3. Once the texture is firm, incorporate the Bollywood sauce and a pinch of salt.

  4. Taste and adjust seasoning according to your spice tolerance.

  5. Refrigerate for 30 minutes before serving to let the flavors set.

Use as a dip, sandwich spread, or accompaniment for grilled vegetables.
