A culinary adventure

With Bean Borracho, we wanted to show that black beans, usually associated with stews, could become the base of a rich and creamy artisanal sauce. Their depth harmonizes with the smoky heat of the chipotle and the brightness of the roasted habanero, creating a unique texture that coats food rather than just adding spice. It is this approach, combining brewing expertise and chili mastery, that makes this sauce stand out in the world of artisanal hot sauces.

Chipotle

Chipotle

The Chipotle pepper is a ripe jalapeño, dried and smoked, originating from Mexico. It provides moderate heat (2,500 to 8,000 SHU) and a deeply smoky, earthy, and slightly sweet flavor profile.

Ingredients

Black beans

Black beans, rich in protein and fiber, provide a creamy texture and natural sweetness to the sauces. Their earthy flavor balances the heat while acting as a natural binder, extending the flavors and softening the spiciness with elegance.

Onions

Onion is a key ingredient in hot sauces, as its natural sugars soften the chili heat, provide a rich aroma that evolves from sharp and vegetal to sweet and umami depending on cooking, and act as a binder to give body and creaminess. Its aromatic compounds extend the flavors on the palate and bridge the acidity, spices, and heat, creating a balanced and harmonious profile.

Gluten-free blonde beer

Light and refreshing, this beer serves as a base to lighten the flavor profiles without altering them. It is used for its malty neutrality, which allows other ingredients to shine, while providing a pleasant cereal note and a smooth texture.
