A recipe that crunches in the mouth and melts on the tongue. The crispy fried chicken is topped with La Pimenterie’s chipotle maple syrup for a divine sweet-smoky touch, accompanied by crunchy broccoli and pickled red cabbage. A dish that is both indulgent, balanced, and vibrant.

Ingredients (for 4 people):
For the chicken:

  • 600 g boneless chicken thighs

  • 1 cup buttermilk (or milk + lemon juice)

  • 1 cup flour

  • 1/2 cup cornstarch

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • Salt, pepper, oil for frying

For the vegetables:

  • 1 small broccoli, cut into florets

  • 1/4 red cabbage, thinly sliced

  • 2 tbsp rice or apple cider vinegar

  • 1 tbsp sugar

  • Pinch of salt

Preparation steps:

  1. Marinate the chicken in buttermilk with salt and pepper for at least 30 minutes.

  2. Mix the red cabbage with vinegar, sugar, and salt. Let marinate in the fridge.

  3. Blanch the broccoli for 2 minutes, then plunge into ice water to keep them crisp.

  4. Mix flour, cornstarch, paprika, garlic powder, salt, and pepper. Coat the chicken and fry at 180 °C for 5-6 minutes. Drain.

  5. Generously drizzle or brush the hot chicken pieces with chipotle maple syrup.

  6. Serve over the broccoli and red cabbage, garnish with coriander and sesame if desired.
