Pasilla Oaxaca

Pasilla de Oaxaca is a rare chili pepper, extremely difficult to find without going there. Its unique characteristic is that it is gently smoked for over a week on a bed of aromatic Oaxaqueño herbs, to develop a deep and unmistakable smoky aroma.

Tamari sauce

Gluten-free soy sauce. It's used for its salty, umami flavor and its deeper taste than regular soy sauce, which pairs wonderfully with chili peppers. It adds intensity and aromatic richness.

Moromi

Moromi, a fermented paste made from tamari, adds umami richness and depth to sauces. Its slow fermentation develops complex aromas that bind the spices and prolong the heat with roundness and balance.

Cocoa

It's used for its bitter, earthy, and slightly fruity flavor. It adds an unexpected complexity to our sauces. It's added to create unique flavor profiles, often inspired by Mexican cuisine, revealing another side of the chili pepper.

Our products have a shelf life of two years unopened. Once opened, they should be refrigerated for one year. The expiration date and batch number are noted at the bottom right of the label.

What is the Scoville scale of your sauces?

We do not specify the Scoville scale for our sauces. Heat is indicated on a scale ranging from 1 to 5 peppers.

For the Challenge Box, here are some instructions:

  • Sauces 1 and 2 contain chilies that are less than 100,000 SHU
  • Sauces 3 and 4 contain chilies between 100,000 and 350,000 SHU
  • Sauce 5 contains chili around 550,000 SHU
  • Sauces 6, 7 and 8 contain chilies between 600,000 and 1,000,000 SHU
  • Sauces 9 and 10 contain a lot of chilies ranging between 1,000,000 and 1,600,000 SHU
