The 7 Pot primo owes its name to its creator, the Louisiana of Acadian descent Troy Primeaux. It is the fruit of a manual hybridization between a Ghost Pepper and a pepper 7 pot of Trinidad and Tobago. It was stabilized and selected naturally over several generations in order to maximize the appearance of one of its characteristic features: the presence of a pointed sting at its end. The 7 Pot Primo and its creator have been at the heart of some controversy due to the great resemblance of the pepper with the Carolina Reaper. Nevertheless, the 7 Pot Primo has nothing to envy to the Reaper! It is a fruity and floral pepper which is extremely powerful. To use with great care.
Barbacoa comes from the Arawak language spoken by the Taìno, a people of the Caribbean. It originally refers to a method of slow-cooking meat over a fire. The word made its way through Mexico to Texas, where it transformed into “Barbecue.” Barbacoa is a Tex-Mex style BBQ sauce, sweet, tangy and slightly spicy with a mixture aromatic Mexican dried peppers. Chile de Arbol pepper, literally translated from Spanish as “tree pepper”, is a true icon of Mexican cuisine. It does not grow in trees, but on a small shrub. This pepper keeps its bright and vibrant red color, even when dried. Little cousin of cayenne and bird pepper, it is used mainly dried for its slightly fruity and nutty aroma. It is a moderately hot variety that is often combined with other peppers to make table sauces or used simply crushed to spice up a dish.

Chipotle is a jalapeño pepper brought to full maturity, turning red, which is then dried and smoked. It is often known in North America canned in Adobo sauce. The meco is by far our favorite chipotle. It gets its beige-amber color from being left to dry on the plant, even once it has matured, which also causes it to discolor under the harsh sun. The chipotle is then slowly smoked at a low temperature, until a rich and deep smoky flavor is obtained. It’s the perfect pepper to add a bit of heat and a natural BBQ taste.
The Bhut Jolokia (Ghost Pepper) has a very interesting history. In 2006, researchers from the University of Assam in India had it analyzed by the Chili Pepper Institute in New Mexico, since it was reputed to be unusually strong. In 2007, the Bhut Jolokia will indeed be consecrated the strongest pepper on earth by the Guinness Book of Records, crossing the symbolic threshold of 1,000,000 scoville units. It is the first “Super hot” pepper to have been listed. Its origin in India remains unclear, since chillies are not native to this region. Many believe that it is the descendant of peppers from Trinidad and Tobago and that it was introduced by the British in the 19th century. It is an extremely hot pepper with floral and fruity notes.
